Black Beans And Rice
- 1/2 lb. black beans
- 1 lb. pork roast, cubed
- 4 slices bacon, diced
- 3 to 4 c. water
- 1 c. chopped onion
- 1 clove garlic, minced
- 1/2 tsp. red pepper flakes
- 1 c. stewed tomatoes
- 4 oz. Hillshire Farm kielbasa, chopped
- 4 oz. ham, cubed
- 1 tsp. dry parsley
- 2/3 c. brown rice
- Soak beans overnight; drain and rinse.
- Cook bacon and set aside; brown pork roast cubes in bacon fat.
- Combine beans, pork and bacon with water; cover and simmer for 2 hours.
- Saute onion and garlic in fat; add to bean mixture.
- Add remaining ingredients (except rice) and simmer for 30 minutes.
- Allow to cool; refrigerate overnight to blend flavors.
- The next day, reheat bean mixture and cook rice according to package instructions.
- Serve beans over rice.
