Black Beans And Rice

  1. Soak beans overnight; drain and rinse.
  2. Cook bacon and set aside; brown pork roast cubes in bacon fat.
  3. Combine beans, pork and bacon with water; cover and simmer for 2 hours.
  4. Saute onion and garlic in fat; add to bean mixture.
  5. Add remaining ingredients (except rice) and simmer for 30 minutes.
  6. Allow to cool; refrigerate overnight to blend flavors.
  7. The next day, reheat bean mixture and cook rice according to package instructions.
  8. Serve beans over rice.
