Quesadillas

  1. Heat oil in large skillet.
  2. Add fajita meat, bell peppers and onion.
  3. Cook until meat is browned and cooked throughout, about 15 minutes.
  4. Drain fat from meat and set cooked fajita meat aside. Spray a large griddle with Pam cooking spray.
  5. Heat on medium-high heat until griddle is hot.
  6. Place 3 to 4 tortillas in a single layer on hot griddle.
  7. Add a layer of fajita meat and a layer of cheese.
  8. Place a flour tortilla on top of cheese.
  9. Cook for 5 minutes and turn.
  10. Cook an additional 5 minutes.
  11. Remove from heat.
  12. Serve while hot with pico de gallo, guacamole and sour cream if desired.
