Kanya's Mushroom Burgers
- 150 grams erinjii mushroom
- 2 shallots
- 2 clove garlic
- 1 small sliced of pumpkin
- 1/2 potato
- 1/3 tsp oregano
- 1 bunch spring onion
- 1 marinated sauce from mushroom bacon
- 2 tbsp grated parmesan cheese
- 1 1/2 tbsp bread crumbs
- 1 egg yolk
- 1 salt and pepper to taste
- 2 slice cheese
- 1 burger bun
- 1 extra sauce for burger bun,like mustard and mayonaise
- 1 1/2 tbsp olive oil
- Roughly chopp mushroom ,slice shallots and minced garlic,dice potato,pumpkin,set aside
- Add oil to sauce pan ,on low heat stir in shallots until light brown ,add diced pumpkin and potato,garlic ,stir until all soft ,dont let it burn ,this is important
- Add roughly chopped mushroom ,take a bit time to stir about 3 mins ,will see mushroom juice,keep stir until almost dry,heat off and transfer to mixing bowl ,let it cool a bit as you can use your palm to touch
- In mixing bowl ,add parmesan cheese,bread crumbs,egg yolk,marinate sauce,little extra salt and pepper ,chopped spring onion ,use your hand to mix all well
- Now i guess you wonder,all is not stick together yet ,use one spoon to smash potato and pumpkin ,mix again, all will become sticky !
- Now is ready to form mushroom burgers patties ,you will get 2 large patty...i will grill only 1 and another one i will keep to make mushroom tbone steak in next recipe :)
- Grill on medium heat until brown ,warm burger bun ,add sliced cheese ,mushroom bacon ,assembled to delicious mushroom burger :) nommm noomm :)
