Shrimp Casserole
- 2 1/2 c. rice
- 1 stick oleo
- 1 c. chopped onion
- 1 c. chopped bell pepper
- 1 c. cream of mushroom soup
- 1 c. pimentos, chopped
- 3 c. shrimp
- 1c. green onion tops
- 1 c. chopped celery
- 3 cloves garlic
- 1 can shrimp soup
- 1 c. chopped parsley
- 2 c. bread crumbs
- red pepper
- salt and pepper
- Measure rice and cook separately.
- Peel and devein shrimp. Boil and save water.
- Saute onion, celery, bell pepper and garlic in oleo until tender.
- Add soups and 1 cup water where shrimp were boiled.
- Stir in chopped parsley, onion tops, cooked shrimp and pimento.
- Add cooked rice and half the bread crumbs.
- Season with salt and both peppers.
