Easy Cheesy Mashed Potatoes & Parsnips

  1. Microwave potatoes as directed in Step 1 of package directions.
  2. Meanwhile, shred parsnips; place in medium microwaveable bowl.
  3. Add water; cover with waxed paper.
  4. Remove cooked potatoes from microwave; set aside.
  5. Microwave parsnips 5 min.
  6. or until tender; drain.
  7. Open bag of potatoes; pour into large bowl.
  8. Add parsnips; mash lightly.
  9. Add milk and butter; mash until smooth.
  10. Stir in cheese and half the chives; sprinkle with remaining chives.
