Mexican-Glazed Meatloaves

  1. Meatloaves: Heat oven to 450 degrees F. Line a baking sheet with foil.
  2. Heat oil in a medium skillet over medium-high heat.
  3. Add onions and chillies and cook 4 minutes; remove from heat.
  4. In a bowl, blend meatloaf mix, chorizo, tortilla chips, cilantro, yogurt, egg, and salt.
  5. Add onion mixture and lightly mix with a fork; split into 4 portions.
  6. Press meatloaf mixture in four 4 1/2- by 2-inch or 5- by 2-inch miniature loaf pans.
  7. Bake on prepared baking sheet for 15 minutes.
  8. Glaze: Combine all ingredients.
  9. After loaves have baked 10 minutes, spoon glaze over loaves.
  10. Bake the remaining 5 minutes or until loaves are fully cooked (160 degrees F with an instant read thermometer).
  11. Pop them out of the baking dishes to serve.
