Fettuccine Alfredo Roma
- 2 lb. fettuccine noodles
- 2 Tbsp. olive oil
- 1/2 lb. sweet butter
- 1 c. grated Parmesan cheese
- 1/4 c. Locatelli cheese, grated
- 1/2 c. Romano cheese, grated
- 1 c. sweet cream
- 1/2 c. sour cream
- salt
- freshly ground pepper
- 2 eggs, slightly beaten
- Cook noodles until tender in salted boiling water with oil added to prevent sticking.
- Drain.
- Melt butter over medium heat. Add cheese, sour cream, cream and beaten egg gradually and blend until slightly thickened.
- Add pasta noodles, salt and pepper to taste and toss lightly.
- Garnish with additional cheese.
- You may add steamed broccoli and shrimp for a lovely variation.
