Apricot Loaf

  1. Soak dried apricots in warm water for 15 minutes.
  2. Drain water and cut apricots into pieces.
  3. Set aside.
  4. Cream in shortening and sugar together.
  5. Add eggs; blend well.
  6. Add sifted flour, baking powder, baking soda and salt alternately with water and orange juice.
  7. Fold in apricots and nuts.
  8. Pour batter in greased 9 x 5 x 3-inch loaf pan.
  9. Push batter into corners of pan, leaving center slightly hollow.
  10. Let stand for 20 minutes before baking.
  11. Bake at 375u0b0 for 60 to 65 minutes.
