Apricot Loaf
- 1 c. dried apricots
- 2 c. flour
- 2 tsp. baking powder
- 1 tsp. salt
- 1/4 tsp. baking soda
- 1/4 c. shortening
- 1 c. sugar
- 1 egg, well beaten
- 1/4 c. water
- 1/2 c. orange juice
- 1/2 c. walnuts
- Soak dried apricots in warm water for 15 minutes.
- Drain water and cut apricots into pieces.
- Set aside.
- Cream in shortening and sugar together.
- Add eggs; blend well.
- Add sifted flour, baking powder, baking soda and salt alternately with water and orange juice.
- Fold in apricots and nuts.
- Pour batter in greased 9 x 5 x 3-inch loaf pan.
- Push batter into corners of pan, leaving center slightly hollow.
- Let stand for 20 minutes before baking.
- Bake at 375u0b0 for 60 to 65 minutes.
