Creamy Butternut Squash Soup

  1. Heat oil in large heavy saucepan on medium heat.
  2. Add onion and garlic; cook and stir 4 min.
  3. or until tender.
  4. Add squash and broth.
  5. Bring to boil.
  6. Reduce heat to low; simmer 40 min.
  7. Pour soup, in batches, into blender container; cover.
  8. Blend until smooth.
  9. Ladle soup into 7 individual bowls.
  10. Top each serving with sour cream and crumbled bacon.
  11. Serve with RITZ Crackers, if desired.
