Sesame Noodle Salad
- 1/2 c. peanut butter
- 13 c. water
- 1/4 c. soy sauce
- 2 tbsp. rice vinegar
- 2 tbsp. Asian sesame oil
- 1/2 tsp. Hot pepper sauce
- 2 clove garlic
- 1/2 lb. cappellini or thin spaghetti
- 1/2 lb. snow peas
- 5 c. Napa cabbage
- 1 cucumber
- 3 scallions
- 2 oz. ham
- 1/4 c. dry roasted peanuts
- Puree dressing ingredients in blender.
- Cook noodles according to package directions.
- During last 2 to 3 minutes of cooking time, add snow peas.
- Drain noodles and snow peas and rinse under cold water; drain well.
- In large bowl toss noodles and snow peas with cabbage and sesame dressing.
- Top with cucumber, scallions, ham, and peanuts.
