Make it don't buy it: coleslaw

  1. Discard the woody centre of the cabbage and slice the leaves into thin shreds.
  2. Use a Y-shaped vegetable peeler to peel the carrots into ribbons.
  3. Cut across these ribbons into smaller strips.
  4. Toss the cabbage and carrot together in a large bowl with the lemon juice.
  5. Stir in the mayonnaise, then the parsley.
  6. Season and serve immediately.
