Make it don't buy it: coleslaw
- 0.5 white cabbage
- 2 large carrots
- 0.5 lemon, juice only
- 1 -2 tbsp mayonnaise
- 3 tsp finely-chopped curly-leaf parsley
- 1 pinch sea salt
- 1 pinch black pepper
- Discard the woody centre of the cabbage and slice the leaves into thin shreds.
- Use a Y-shaped vegetable peeler to peel the carrots into ribbons.
- Cut across these ribbons into smaller strips.
- Toss the cabbage and carrot together in a large bowl with the lemon juice.
- Stir in the mayonnaise, then the parsley.
- Season and serve immediately.
