Mexican Pie

  1. Heat oven to 400F.
  2. Grease 10" pie plate.
  3. Brown beef & drain.
  4. Stir in taco seasoning.
  5. Spread beef mixture in pie plate.
  6. Sprinkle with cheese.
  7. Whisk remaining ingredients together until well blended.
  8. Pour into pie plate.
  9. Bake until golden brown, about 30 minutes.
  10. Let stand 5 minutes before serving.
  11. Garnish with extra cheese if desired.
