Coffee Roast on the Grill

  1. Mix marinade and marinate roast overnight in a ziplock bag.
  2. Flipping over several times.
  3. Set up your grill for a 3 Zone Fire.
  4. A double thick layer of hot charcoal in the back, a single layer in the middle and heat free zone in the front.
  5. Remove the roast from marinade and pat dry (reserve the marinade).
  6. Grill roast directly over heat.
  7. When you have a nice brown crust (about 3 or 4 minutes) flip over and brown second side.
  8. Place the roast in a drip pan and add the marinade.
  9. Place directly over the heat until the marinade comes to a boil.
  10. Then move the roast to the front of the grill and close the lid.
  11. Cook at 350F or higher for about 2 to 3 hours.
  12. Flip the roast every 30 minutes and add a bit of water if needed.
  13. Let rest for 10 minutes before carving.
