Black Bean Salad With Cumin Vinaigrette
- 2 cans black beans, drained
- 1 Tbsp. red wine vinegar
- 1 tsp. ground cumin
- 1 Tbsp. chopped cilantro
- 1/2 red pepper, diced
- 1/2 green pepper, diced
- 4 scallions, thinly sliced
- 1 tsp. salt
- 1 clove garlic, minced
- 1 tsp. hot pepper sauce
- 1/2 c. no oil Italian dressing
- 1/2 yellow pepper, diced
- 1 red onion, diced
- cilantro for garnish
- Place beans in large mixing bowl.
- Add peppers, red onion and scallions.
- In a small bowl, combine remaining ingredients, except cilantro garnish.
- Mix well to combine.
- Pour over bean mixture. Toss well to combine.
- Serve at room temperature.
- Garnish with cilantro.
- Makes 4 servings.
