Cranberry-Orange Relish

  1. Drain crushed pineapple and reserve the syrup.
  2. If necessary, add enough water to this syrup to make 1/2 cup of liquid; set aside.
  3. Mix together the crushed pineapple, celery and nuts and also set aside.
  4. Place jello gelatin into desired serving bowl. Pour 1 cup boiling water over the jello and mix until dissolved. Add the reserved pineapple liquid, along with the cranberry-orange relish to the gelatin; stir to combine.
  5. Place in refrigerator. When the gelatin is partially set, stir in the pineapple, celery and nut mixture.
  6. Chill until firm.
  7. Delicious with turkey. Yield:
  8. 6 to 8 servings.
