Quickie Goat Cheese and Roasted Red Pepper Sandwich
- 2 slices Crusty Bread, Ciabatta Or Foccaccia Work Well
- 2 teaspoons Olive Oil
- 3 Tablespoons Spreadable Goat Cheese, Plain Or Flavored
- 1 whole Roasted Red Pepper From The Jar, Well Drained
- 4 slices Cucumber
- 5 pieces Red Onion Slices
- 1 pinch Salt
- 2 pinches Fresh Cracked Black Pepper
- If you are using mini loaves of bread, slit the loaf open but not all the way (or you can use 2 slices of bread).
- Splash the olive oil all over the bread.
- Spread the goat cheese generously.
- Chop red pepper into long strips.
- Top the bread with roasted red pepper, cucumber and red onion.
- Sprinkle salt and fresh cracked pepper.
- Close the sandwich and wrap tight with plastic wrap if you want to pack it for lunch (or a picnic).
