Tex Mex Mole Recipe
- 1 whole chicken
- 1/2 c. all-purpose flour
- Pepper
- Salt
- 1/4 c. chili pwdr
- 1 tbsp. peanut butter
- 1 clove garlic
- 1/2 teaspoon cumin seeds
- 2 c. water
- Cut and clean chicken.
- Steam cook chicken, add in salt and pepper to taste.
- While chicken is cooking, add in flour and chili pwdr into a bowl.
- Mix well and add in 2 c. water, stir till dissolved.
- Grind garlic and cumin seeds.
- When chicken is cooked, pour in flour and chili mix, cumin and garlic Stir well.
- Add in peanut butter and stir.
- Gradually stir in a little more water to thin mix a little.
- Simmer to a gravy consistency.
- Add in salt and pepper to taste.
- Chili pwdr may be a little less or possibly more depending on one's taste, and desired color of gravy.
