Tortilla Black Bean Cassarole

  1. In large skillet combine first 6 ingredients.
  2. Bring to boil, reduce & simmer uncovered 10 minutes.
  3. Add drained & rinsed beans.
  4. In 13x9 pan layer 1/3 bean mixture, 6 of the tortillas*, 1 c cheese, 1/3 bean mixture, 6 tortillas, last 3rd of bean mixture.
  5. (*overlap tortillas as necessary).
  6. Cover & bake 350 for 30 minutes.
  7. Remove cover, spread last cup of cheese & return to oven for 10 minute
  8. Remove and let stand 10 minutes before cutting.
  9. Serve with optionals.
