Island Sweet Potato Pie
- 1 pie shell (unbaked)
- 4 lg. sweet potato (cooked)
- 4 oz. soften butter
- 1-1/2 cup granulated sugar
- 2 lg. eggs
- 1-1/2 tsp. cinnamon powder
- 1 tsp. nutmeg (grated)
- 1 tsp. vanilla extract
- 4 tbsp. brown sugar
- 1/2 cup coconut milk(subt.wth evaporated milk)
- 1/2 cup rum
- FILLING slightly crush potatoes.Add coconut milk,butter and granulated sugar and mix well.Add eggs and mix.Add 1teaspoon cinnamon ,1teaspoon nutmeg and Vanilla and mix.
- Lastly add rum.
- PIE CRUST Allow pie crust to cool to room temp.
- As this is a sugary pie I recommend that the pie shell be slightly floured.
- Preheat oven to 350 degrees.
- Crarefully place pieshell into dish and add filling and bake for 35-40 minutes.
- TOPPING 1/2 cup coconut milk 4 tablespoon brown sugar 1/2 teaspoon cinnamon mix together Mixture should be slighty thick(syrup like)optional Browning (a food colring made from sugar) pour unto pie 5 minutes before baking is completed
