Rum Cherry Nut Cake
- 1 (18 oz.) pkg. yellow cake mix
- 4 eggs or Egg Beater equivalent
- 1/3 c. rum
- 1/2 c. margarine, melted
- 1/2 c. finely chopped nuts
- 1/2 to 1 c. confectioners sugar
- 1 (3 3/4 oz.) pkg. vanilla instant pudding
- 3/4 c. cooking oil
- 1/3 c. water
- 1/2 c. chopped maraschino cherries
- 1/2 c. packed brown sugar
- brandy or rum
- In large mixer bowl, combine cake mix, pudding mix, eggs, oil, rum and water.
- Beat at medium speed until well blended.
- Into 10-inch tube pan, pour melted margarine.
- Sprinkle with cherries, nuts and brown sugar.
- Pour in batter.
- Bake in 325u0b0 oven 45 to 60 minutes.
- When done, immediately remove cake from oven and pan, turning upside down on cake plate.
