Carrot Muffins with Cinnamon Streusel Topping
- 2 eggs
- 1 cup sugar
- 1 tbsp vanilla sugar
- 1/2 cup oil
- 2 baby carrot jars or 1 cup cooked carrots, blended
- 1 cup flour
- 1/2 tsp baking powder
- 1 scant 1/2 teaspoon baking soda
- 1 tsp vanilla extract
- 1 dash of cinnamon
- 2 tbsp apple juice
- 3/4 cup brown sugar
- 1/2 cup flour
- 1/2 stick margarine
- 1 generous sprinkle of cinnamon
- Preheat oven to 350.
- Beat the eggs.
- Add sugars and oil.
- Mix in rest of ingredients for muffins.
- Pour into cupcake holders or tins.
- Combine all streusel ingredients until you get a crumbly mixture.
- Sprinkle over muffins.
- Bake approximately 40 minutes.
