Roast Capon with Rice Stuffing

  1. Cook and stir celery and onions in 3 tablespoons butter.
  2. Add rice and seasoning; mix lightly.
  3. Stuff capon with rice mixture; close openings with skewers and string.
  4. Place, breast side up, on rack in baking pan.
  5. Melt remaining butter; brush on capon.
  6. Bake at 325F for 2 hours and 30 minutes or until tender, brushing occasionally with butter.
