Roast Capon with Rice Stuffing
- 1/2 cup celery slices
- 1/3 cup chopped onion King Sooper's 1 lb For $0.99 thru 02/09
- 1/2 cup (1 stick) butter or margarine, divided
- 2 cups cooked MINUTE White Rice
- 1/2 tsp. poultry seasoning
- 1 capon (6 to 7 lb.)
- Cook and stir celery and onions in 3 tablespoons butter.
- Add rice and seasoning; mix lightly.
- Stuff capon with rice mixture; close openings with skewers and string.
- Place, breast side up, on rack in baking pan.
- Melt remaining butter; brush on capon.
- Bake at 325F for 2 hours and 30 minutes or until tender, brushing occasionally with butter.
