Baked Beans - Texas Style
- 2 lb. extra lean round, ground
- 1 large green pepper, diced
- salt to taste
- 1 large can pork and beans, drained
- 2 (15 1/2 oz.) cans Great Northern beans
- 2 (4 oz.) cans Ortega diced green chiles
- 1/2 tsp. ground coriander
- 2 Tbsp. bacon drippings (may omit)
- 1 large white onion, diced
- 2 to 3 stalks celery, diced
- 1 large can kidney beans, drained
- 2 (15 1/2 oz.) cans navy beans
- 1 to 1 1/2 c. ketchup
- 1/2 tsp. ground cumin
- 1/4 to 1/3 c. light brown sugar
- Brown the meat, onion, peppers and celery. Add salt to taste. Add remainder of ingredients, mixing well.
- Place in a large baking dish or pan.
- Bake at 300u0b0 to 325u0b0 for 30 minutes. Serves about 20.
