Larb, Pork
- 5 each sprigs cilantro
- 1 each sliced green onion
- 3 tbsp fish sauce
- 1/4 each sliced shallot
- 1 1/2 each juice limes
- 1/4 tbsp dried chilli pepper
- 1 tbsp roasted rice
- 1/2 each juice lime
- 1/2 lb ground pork
- 2 tbsp water
- mix 1/2 lime juice with ground pork.
- Let stand for 10 minutes.
- Heart a pan on high until very hot.
- add water, then the pork and stir.
- keep stirring until the pork is done.
- put the sauce ingredients in a bowl large enough to hold everything, including the pork.
- mix together.
- add pork to sauce in bowl, mix well
- taste.
- it should be a little spicy and tart.
- modify fish sauce or lime and required.
- best to serve with rice, and can do a lettuce wrap our rice bowl thing.
