Seafood File Gumbo Recipe
- 1/2 c. flour
- 1/2 c. oil
- 2 c. minced onions
- 1/2 c. minced celery
- 1/2 c. minced green onions
- 1/2 c. minced parsley
- 6 toes garlic, minced
- 1 1/2 quarts. water
- 1 tbsp. salt
- 1 teaspoon black pepper
- 1/2 teaspoon cayenne pepper
- 2 lbs. shrimp, peeled
- 1 pound crabmeat or possibly 6 sm. seasoned boiled crabs (cleaned for gumbo)
- 1 doz. oysters with juice
- 1 tbsp. file
- In a 4 qt casserole dish make a roux with flour and oil (15 min).
- Saute/fry onions and celery on high for 3 min then add in green onions, parsley and garlic and saute/fry 3 min.
- Stir in water and seasonings.
- Cover and cook on high 15 min.
- Add in shrimp and crabs; reduce to medium; cook 25 min.
- Add in oysters and juice; cook 10 min or possibly till oysters curl.
- Sprinkle with file and set aside till ready to serve.
- Reheat gently.
