Farmer's Casserole

  1. Grease a 2-quart baking dish.
  2. Arrange potatoes evenly in the bottom of the dish.
  3. Sprinkle with cheese, ham, and green onion.
  4. In a medium bowl, combine eggs, milk, pepper, and salt.
  5. Pour egg mixture over potatoe mixture in dish (this dish may be covered and refrigerated at this point for several hours or overnight).
  6. Bake, uncovered, in a 350 degree oven for 40 to 45 minutes (or 55-60 if made ahead and chilled) or until center appears set.
  7. Let stand 5 minutes before serving.
