Apple Bran Coffeecake
- 1/2 c. all-bran
- 1 c. butterscotch morsels
- 1/2 c. chopped pecans
- 1 1/4 c. all-purpose flour
- 1/2 tsp. baking powder
- 3/4 tsp. baking soda
- 1 c. sugar
- 2 large eggs
- 1/2 c. butter, softened at room temperature
- 1 c. sour cream
- 1 c. peeled and grated red Delicious apples
- Preheat oven to 350 degrees. Grease a 9x13x2 baking pan. In the bowl of the food processor fitted with the steel blade, combine the all-bran and butterscotch morsels.
- Process until the mixture is fine but not powdery. Remove the blade and stir in the pecans.
- Reserve 3/4 cup of this mixture.
- In a large mixing bowl, combine the flour, baking powder, baking soda, sugar, eggs, butter and sour cream.
- Mix well.
- Stir in the apples and the bran mixture (except the reserved 3/4 cup). Pour the batter into the prepared pan. Sprinkle with reserved bran mixture.
- Bake for 30 to 35 minutes or until a toothpick inserted in the center comes out clean.
- Cool for about 10 minutes on a cake rack.
- Drizzle with glaze. Serves 12.
