Poor Mans Caviar
- 1 cup White Vinegar
- 1 cup White Sugar Or Splenda (or 1/2 Each)
- 3/4 cups Olive Oil (mild)
- 1 whole Vidalia Onion, Chopped Fine - Or Other Sweet Variety Onion
- 2 cans Rotel Original Diced Tomatoes & Green Chiles, Drained
- 1 can White Whole Kernel Corn, Drained
- 1 can Pinto Beans, Rinsed Well And Drained
- 1 can Black Beans, Rinsed Well And Drained
- 1/2 cups Black Olives, Chopped (1 Small Can)
- Combine vinegar, sugar and olive oil in small sauce pan.
- Bring to a boil, stirring often, then remove from heat and let cool.
- Combine remaining ingredients with cooled sauce and let marinade in the refrigerator several hours or overnight.
- The longer it has to marry the better it will be.
- This is addictive and pretty healthy, especially if you dont eat the whole batch!
- Serve as a dip (with Fritos Scoops) or it is also great with grilled meats and fish.
- Our favorite is to add it on top of grilled chicken in sandwiches.
- This does not need to be kept cold so it is perfect for summertime BBQs.
