Carla's Sweet Corn and Tomato Relish

  1. Heat grill on high heat until very hot.
  2. Rub corn with enough oil to lightly coat.
  3. Grill, turning occasionally, until blackened in spots and starting to pop, about 5 min.
  4. (Dont overcook!
  5. Corn should still be yellow and have a bite.)
  6. Transfer to plate and let cool.
  7. When cool enough to handle, lay each ear of corn on its side and cut off one side of kernels.
  8. Rotate cob and cut off another side of kernels.
  9. Keep rotating and cutting until all kernels are off.
  10. Transfer kernels to large bowl and add tomato, onion, jalapeno, garlic, lime peel, and juice, cumin, salt and 2 tablespoons oil.
  11. Toss until well mixed.
  12. Garnish with cilantro.
