Carla's Sweet Corn and Tomato Relish
- 4 ear corn
- 2 tbsp. Extra virgin olive oil
- 1 large tomato
- 1/2 small red onion
- 1 jalapeno chile
- 2 small garlic cloves
- 1 lime, juice and peel
- 1 tsp. ground cumin
- 1/2 tsp. kosher salt
- 1 tbsp. fresh cilantro leaves
- Heat grill on high heat until very hot.
- Rub corn with enough oil to lightly coat.
- Grill, turning occasionally, until blackened in spots and starting to pop, about 5 min.
- (Dont overcook!
- Corn should still be yellow and have a bite.)
- Transfer to plate and let cool.
- When cool enough to handle, lay each ear of corn on its side and cut off one side of kernels.
- Rotate cob and cut off another side of kernels.
- Keep rotating and cutting until all kernels are off.
- Transfer kernels to large bowl and add tomato, onion, jalapeno, garlic, lime peel, and juice, cumin, salt and 2 tablespoons oil.
- Toss until well mixed.
- Garnish with cilantro.
