Alaskan Moose Roast
- 1 medium moose rump roast
- 1/4 c. shortening or bacon grease
- 1 pkg. Lipton onion soup mix or 1 c. chopped onion
- 2 cloves chopped garlic or powdered garlic to taste
- 1/4 tsp. pepper
- 1 (4 oz.) can mushroom pieces or 1 lb. sauteed, fresh mushrooms
- 1 beef bouillon cube
- 1 c. water
- 6 to 8 carrots, peeled (whole)
- celery chunks
- 3 Tbsp. cornstarch and water (added to make paste)
- Braise moose roast in shortening/bacon grease on both sides until golden brown.
- Put braised roast in roasting pan.
- Surround with vegetables and cover with aluminum foil.
- Bake at 350u0b0 for 2 hours.
- Reserve drippings; add desired amount of water to make gravy.
- Bring to boil and thicken with cornstarch paste.
- Serves 6 to 8.
