Red Hot Pickles(Like Candy Apples)
- 2 gal. cucumbers, peeled, cored and sliced
- 2 c. lime
- 8 1/2 qt. water
- 1 c. red apple cider vinegar
- 2 oz. red food coloring
- 1 Tbsp. alum
- 2 c. red apple cider vinegar
- 2 c. water
- 10 c. sugar
- 1 pkg. red hots
- 2 to 8 sticks cinnamon
- Cover cucumbers with lime and 8 1/2 quarts water.
- Set 24 hours.
- Drain and wash.
- Soak in cold water 3 1/2 to 4 hours. Drain.
- Simmer cucumbers in next 3 ingredients with enough water to cover cucumbers for 2 hour.
- Drain and throw away liquid.
- Bring next 5 ingredients to boil.
- Add cucumbers.
- Set overnight.
- Drain and reheat syrup 3 times (morning, evening and next morning).
- On third day, pack and seal.
- Process 5 to 10 minutes.
