Curried Chicken & Broccoli Casserole
- 2 (10 oz) frozen broccoli chunks
- 3 chicken breasts, cooked and diced
- 2 (10 3/4 oz) cream of chicken soup
- 1 c mayonnaise
- 1 tsp lemon juice
- 1 tsp curry power
- 1 c shredded cheddar cheese, mild or sharp
- 1 c croutons
- 1 tsp margarine, Melted (for pan)
- Preheat oven to 350 degrees.
- Cook broccoli in microwave as directed on pkg, or until tender.
- Drain and arrange in a shallow greased pyrex baking dish.
- Place chopped chicken on top.
- Combine soup, mayo, lemon juice, and curry powder.
- Pour and spread on top of chicken.
- Sprinkle croutons on top and bake, 15 to 20 minutes or until bubbly.
- Sprinkle cheddar cheese on top of croutons and continue baking for 10 minutes, or until cheese is melted.
