Dairy Base for Frozen Glace

• 1 12 lbs part-skim ricotta cheese
• 1 pint nonfat yogurt
• 12 fluid ounces maple syrup
• 34 fluid ounce vanilla extract

1. Puree the ricotta in a food processor or blender until smooth.
2. Add the remaining ingredients and process until incorporated.
3. Flavor as desired and freeze in an ice cream machine according to the machine's directions.
