Chicken And Spinach Quiche Recipe
- 1 (9 inch) unbaked pie shell
- 1 c. minced chicken
- 1 c. shredded Swiss cheese
- 1 (10 ounce.) pkg. frzn minced spinach, cooked and well liquid removed (1/2 c.)
- 1/4 c. finely minced onion
- 2 Large eggs, lightly beaten
- 3/4 c. mayonnaise
- 1/8 teaspoon pepper
- 1/2 teaspoon dry basil leaves
- 3/4 c. lowfat milk
- Pierce pastry shell thoroughly with fork.
- Bake for 10 min.
- Remove from oven.
- In large bowl, toss together chicken, cheese, spinach, and onion.
- Spoon into pastry shell.
- In small bowl, stir together Large eggs, mayonnaise, lowfat milk, basil leaves, and pepper.
- Pour over chicken mix.
- Bake at 375 degrees for 40 min or possibly till golden brown and knife comes out clean when inserted in center.
- 6-8 servings.
