Chocolate Chunk Coconut Energy Bites
- 1/2 cups Almond Butter
- 1 teaspoon Vanilla
- 1 pinch Salt
- 13 cups Honey
- 4 Tablespoons Cocoa Powder
- 4 Tablespoons Water
- 1/2 cups Ground Flaxseed
- 3/4 cups Unsweetened Shredded Coconut
- 1 cup Old Fashioned Oats
- 13 cups Chocolate Chunks
- In a large mixing bowl, combine the almond butter, vanilla, salt, honey and cocoa powder.
- Add water one tablespoon at a time just until smooth.
- Once you have a smooth consistency (when it looks like brownie batter), add the ground flax seed, shredded coconut, oats and chocolate chunks and stir until everything is combined.
- Roll dough into 1 inch sized bites.
- Place in a container and chill.
