Banana Bread - Vegan

  1. Preheat oven to 350 deg F.
  2. Grease (I use canola oil) bread pan (I use mini-loaves).
  3. Whisk together warm water and Flax seed meal.
  4. This replaces 2 eggs with the added nutty flavor (I don't like the nut texture).
  5. Let sit until slightly jelled, usually about 5 minutes.
  6. Mix together first 5 ingredients and "egg" mixture.
  7. Beat 1 minute on medium speed until all ingredients are well blended.
  8. Stir in remaining ingredients on high speed until moist and completely mixed.
  9. Bake for 50 - 60 minutes - depending on oven.
  10. If using mini-loaves bake for 35-40 minutes.
  11. Will make approximately 7 mini-loaves.
  12. Enjoy warm or not!
