Barley
- 1/2 onion, peeled, finely diced
- 1/2 teaspoon ground garlic
- 2 bay leaves
- 1 tablespoon salt
- 2 tablespoons butter
- 1 pound barley
- 6 cups chicken stock
- Barley: Cook onion, garlic, bay leaves, and salt in butter until onions are soft, do not color.
- Add barley and chicken stock and cook until barley is tender.
- Serve barley with Braised Beef Shank
