Cheesy Chicken with Spinach and Salsa

  1. HEAT oil in an ovenproof skillet and brown the chicken on both sides.
  2. Transfer to a hot oven 200 degrees C and bake for 15 minutes.
  3. PLACE the spinach leaves on the chicken fillets, spoon over salsa and top each fillet with 2 slices of cheese.
  4. Bake for a further 10 minutes or until chicken is cooked and the cheese is golden.
  5. PLACE chicken on warm serving plates with potatoes and serve with salad.
  6. Serve immediately.
