Sour and Sweet Red Cabbage

  1. Cook bacon till crisp in a Dutch oven; drain on paper towels.
  2. Reserve 1 tablespoon drippings in Dutch oven.
  3. Crumble bacon; set aside.
  4. Add cabbage, apples, sugar, bay leaf, cloves, allspice and pepper.
  5. Cook, covered, over medium heat 5 minutes.
  6. Uncover and cook about 15 minutes more, stirring occasionally or until cabbage is tender.
  7. Remove bay leaf.
  8. Add vinegar, brown sugar and salt.
  9. Stir in bacon and serve.
