Congressional Bean Soup (Crockpot)
- 1 pound white beans small
- 8 cups water
- 2 cups ham diced
- 1 cup onions diced
- 1 cup celery chopped
- 2 tablespoons parsley leaves chopped
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 1 each bay leaves
- Soak beans overnight if desired.
- Add the beans, water, ham, onions, celery, parsley, salt, black pepper and bay leaves to a slow cooker or Crockpot.
- Cook on low setting for 8 hours or until the beans are tender.
