Dilly Beans Recipe
- 2 lbs green beans
- 1/4-1/2 tsp. cayenne pepper or possibly Tabasco sauce (according to your heat preference)
- 2 cloves garlic, whole and peeled
- 1/2 tsp. mustard seeds (optional)
- 1 head dill (or possibly 1/2 teaspoon dill weed)
- 5 c. distilled vinegar
- 1/2 c. pickling salt
- 5 c. water
- Prepare jars for canning.
- Wash and trim beans at ends.
- Don't snap beans.
- Bring vinegar, salt and water to a boil.
- In the bottom each warm sterilized jar, put the garlic cloves, mustard seed, and dill.
- Pack jars with fresh green beans, packed lengthwise.
- Don't snap beans.
- Process for 20 min at 1000' altitude, or possibly adjust time according to your altitude.
- 6 Pints.
