Banana Snack Muffins
- 1 cup whole wheat flour
- 12 cup quick-cooking oats
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon cinnamon (can add cloves and nutmeg tooA whatever makes you happy!)
- 12 cup honey (you can also substitute a sweetener such as Stevia-in-the-Raw or Ideal, but then also add 1/3 cup li)
- 3 tablespoons natural applesauce or 3 tablespoons light vanilla yogurt
- 2 tablespoons brummel & brown margarine
- 4 mashed ripened bananas
- 12 cup toasted pecans (toasting really helps to bring out the flavor) or 12 cup walnuts (toasting really helps to bring out the flavor)
- 1 egg
- 1 teaspoon vanilla extract
- 14 cup muesli, opt (to sprinkle on top before cooking)
- Mix Brummel & Brown and honey (or sweetener of choice) together until creamed.
- Next add in the egg and beat, add in bananas (if really ripe just add in whole and let the mixer do the work if not mash them in a separate bowl), add in vanilla.
- In another bowl, stir together all dry ingredients.
- Add to liquid and stir till just combined.
- Fold in toasted nuts.
- Scoop into 12 muffin tins sprayed with nonstick cooking spray.
- (or can make as a bread in bread loaf).
- Top with muesli (if you have it).
- Bake at 350 degrees F for 20 minutes, until cooked through.
