Cajun Fettuccini
- 1 tablespoon olive oil
- 34 cup smoked sausage, sliced
- 12 medium shrimp (30-35 per pound)
- 2 teaspoons fresh garlic, minced
- 12 teaspoon cayenne pepper
- 2 tablespoons dry sherry
- 13 cup half-and-half
- 13 cup chicken stock
- 14 cup scallion, chopped
- 23 cup parmesan cheese, freshly grated
- 3 cups fettuccine pasta, cooked
- Drizzle oil in the pan.
- Saute the smoked sausage, shrimp, and minced garlic.
- Add the cayenne pepper.
- Deglaze the pan with the sherry.
- Then add and heat up the half-and-half, and chicken stock.
- Stir in the scallions, and then add the parmesan cheese.
- Serve over the cooked fettuccini.
- Enjoy!
