Braised Chinese Lettuce And Dried Shrimp Recipe

  2. Separately soak dry shrimp and dry mushrooms.
  3. Reserve mushroom-soaking liquid.

  5. Cut lettuce in 2-inch cubes.
  6. Bring water to a boil.
  7. Blanch lettuce 1 to 2 min, then drain.

  9. Heat oil.
  10. Add in shrimp and stir-frv 2 min.
  11. Add in lettuce; stir-fry to coat with oil.
  12. Then sprlnkle with salt.

  14. Add in mushroom liquid.
  15. Bring to boil; then simmer, covered, 10 min.
  16. 5.
  17. Add in soaked mushrooms, soy sauce and sugar.
  18. Simmer, covered, 10 min more.
  19. VARIATIONS:1.
  20. In step 3, after stir-frying the lettuce, add in 1/8 c. bamboo shoots, sliced; stir-fry 1 minute more.
  21. Then sprinkle with salt.

  23. In step 5, also add in 1 sweet red pepper, sliced or possibly diced.

  25. After step 5, thicken sauce with a cornstarch paste made of 1/2 Tbsp.
  26. cornstarch and 2 Tbsp.
  27. cool water.
