Lychee Shrikhand
- 750 g Greek yogurt
- 12 cup icing sugar
- 10 lychee, fresh
- 3 drops lychee, essence
- 1 -2 teaspoon whipping cream
- 1 muslin cloth
- Hang yogurt in a muslin cloth until all the liquid from the yogurt has drained off.
- (Approximately 2 hours.

- Dissolve Lychee essence in whipping cream and set aside.
- Using fresh lychee or tin, cut into small pieces and add into whipping cream, stir well to cover all lychee pieces.
- In a big bowl add the hung yogurt, sugar and whipping cream-lychee mixture.
- Mix well and transfer to a glass bowl and refrigerate till cold.
- Serve with your favorite garnishing and lychee.
