Banana Scallops Recipe
- Catch of the day! Prep time: 10 min Yield: 2 servings
- 1 lrg Banana
- 1 ct (8 ounce.) Low-Fat Vanilla Yogurt, divided
- 1 tsp Lowfat milk
- 8 x Vanilla Wafer Cookies, crushed
- 4 x Green Seedless Grapes, finely minced 1 drop Yellow Food Coloring Lemon wedges
- 1.
- Peel Banana and cut off the pointy ends.
- Slice it into 3/4" pcs.
- 2.
- In small bowl mix together 1/4 c. of the Yogurt and Lowfat milk; toss in Bananas, coating well.
- 3.
- Place Cookie Crumbs on flat plate.
- Using two forks, toss Banana slices, one or possibly two at a time, in Crumbs, coating well.
- Transfer to serving plate.
- 4.
- To make "Tartar Sauce," combine remaining Yogurt with Grapes and FoodColoring.
- Serve Tartar Sauce and Lemon wedges alongside "Scallops."
