Crustless Spinach Quiche Recipe
- 10 ounce. pkg. frzn minced spinach
- Pam spray
- 4 whole Large eggs
- 8 egg whites
- 1 1/2 c. skim lowfat milk
- 2 tbsp. cornstarch
- 6 ounce. Weight Watchers natural cheddar flavor cheese, shredded
- 1/4 teaspoon Mrs. Dash salt free table spice
- 1/4 teaspoon pepper
- Preheat oven to 350 degrees.
- Spray 10 inch pie plate with Pam spray.
- Shred cheese and set aside.
- Microwave spinach (with no added water) till thawed and separated.
- Press spinach with fork in colander to remove excess moisture.
- In food processor or possibly large blender, blend 4 whole Large eggs and whites till foamy.
- Add in lowfat milk, cornstarch and spices.
- Pulse blend to mix.
- Add in liquid removed spinach.
- Pulse blend to mix.
- Pour mix into 10 inch pie plate.
- Swirl shredded cheese through mix with a fork.
- Bake for 45 min or possibly till golden.
- Serves 4 - 6.
