Duck Breast With Lime and Honey

  1. Begin by heating up only 1 tablespoon of olive oil in a large pan over medium heat.
  2. While the oil is heating, make four shallow slits in the fatty side of the duck breast.
  3. Turn it over to the meaty side and make 4 to 5 slits around a centimeter deep...this is where we will add the lime wedges.
  4. When the oil is hot, place the duck filet in the pan fat side down and let it brown for less than a minute.
  5. Flip it and quickly brown it on the meaty side for less than a minute.
  6. Transfer the duck breast into a baking pan and smear it with the honey.
  7. Slice the lime into wedges and cut those wedges in half.
  8. Wedge one into each of the slits in the top of the duck (the meaty side).
  9. Sprinkle the whole thing with half of the thyme and put it in the oven at 375 degrees F for 10 minutes.
  10. In the meantime, add the rest of the oil into the pan over medium heat.
  11. Then add the slices of zucchini.
  12. Sprinkle them with the rest of the thyme and flip them 2 or three times.
  13. They should take 3-5 minutes maximum.
  14. When done they should be slightly brown on each side, or at least a little translucent.
  15. Place the zucchini on a plate and place the finished duck on top.
  16. Pour the honey drippings from the pan onto the duck.
