Homemade Pancake Batter Mix
- 40 grams Raw cane sugar
- 1 pinch Salt
- 2 tbsp Cornstarch (or katakuriko)
- 2 tsp Baking powder (aluminum-free)
- 150 grams Plain flour (ideally, mix equal amounts of bread and cake flour)
- 1 few drops for when you cook the pancakes Vanilla oil (optional)
- Put a bowl or a resealable bag on a scale, and add all the ingredients except for the flour (don't zero out the scale after adding the ingredients).
- Add the flour last, so that the total weight of the ingredients comes to 200g.
- Mix well (if using a resealable bag, shake it around) and it's done!
- If you use just cake flour the pancakes will be light and fluffy.
- If you use just bread flour, they will be chewier.
- If you mix both, you'll have American-style pancakes.
- Just add 1 cup soy or milk (200 ml) to the mix and cook.
- (If you add egg, add 1 egg and 180 ml of milk.)
- Serve the pancakes with an easy chocolate sauce
- Add 1/2 a block of tofu to 200 g of this pancake mix.
- Drop spoonfuls into hot oil and deep fry.
- The donuts are moist even when cold.
- Bake fluffy and moist tofu cupcakes.
- No need for white sugar, eggs or dairy products.
- For banana bread, mix 200 g of pancake mix with 1 banana, 1/2 cup (100 ml) soy milk, 1/4 cup (50 ml) oil, 1 egg and 40 g of sugar.
