Country Morning Skillet

  1. Heat oil in large nonstick skillet on medium heat.
  2. Add vegetables; cook 5 min.
  3. or until potatoes are lightly browned, stirring occasionally.
  4. Add eggs, 1 at a time, to skillet, spacing eggs evenly over potatoes; cover.
  5. Cook 3 to 4 min.
  6. or until egg whites are set and yolks begin to thicken but do not become firm.
  7. Sprinkle with cheese; cook, covered, 1 min.
  8. or until melted.
